SPICY BEEF NOODLE SOUP

SPICY BEEF NOODLE SOUP (BÚN BÒ HUẾ) is one of the tastiest Vietnamese noodle soup. It’s a rich and spicy soup with deep layers of flavor and many nutritional values. This soup is paired with slices of beef and topped with lots of fresh herbs. Here is the recipe to make and enjoy delicious Bún Bò Huế yourself.
Preparation: 30 minutes
Cook time: 3 hours
Serving: 6-8 bowls

Ingredients
– Beef flank: 1lb
– Pork hock: 1 lb
– Beef tendon: 1lb
– Beef or pork bone: 1lb
– Red Goat – Bún Bò Huế Noodles: 1 pack
– Toppings (optional): garlic & pepper pork roll, pork blood
– Condiments: 6 stalks of lemongrass, onion, garlic, chili powder, seasoning powder, sugar, cashew oil, Red Goat shrimp paste
– Vegetables and herbs: cilantro, green onion, bean sprouts, coriander, basil, mint, banana flowers, split morning glory.
Instruction
Step 1: Prepare the meat
Wash the meat with 1tbsp of salt then add all the meat to a pot with enough water to submerge it, bring to a boil. Drain and rinse thoroughly.

Step 2: Stew meat and bones
Put lemongrass and onion at the bottom of the pot, add 2 tbsp of salt, then add meat/bone and fill water to the brim. Bring to a boil then drop the heat to medium. Cook until meat is tender.
Step 3: Cook the broth
The beef broth and bone broth are poured into 1 pot, then add cold water to just 5 liters of water.
Bring the pot of water to the stove to boil, seasoning: 3 tbsp of fish sauce, 2 tbsp of salt, 2 tbsp of sugar, 3 tbsp of Red Goat shrimp paste. Taste and adjust seasonings to taste.
* Tip to make the broth fragrant and beautiful color: Heat 2 tbsp oil, non-aromatic 1.5 tbsp minced lemongrass, 1 tbs minced garlic. When lemongrass and garlic are tight, fragrant, add 2-3 tbsp of cashew oil and turn off the heat.
Now just pour this mixture into the pot of simmering water.
Step 4: Presentation
Prepare vegetables: Mince a little coriander, onions, and cilantro and slice thinly onions, giò huế slices, vermicelli (follow instruction on the package)
Put vermicelli on bow and top with slides of beef flank/tendon, pork hock, slides of garlic and pepper pork roll. Sprinkle the bowl with minced coriander, onion and cilantro then fill with broth. Served with split morning glory, shaved banana, bean sprouts, herbs, chili, lime.
